Stephanie spent decades trapped in a low-fat, high-carb cycle that left her overweight, asthmatic, hormonally depleted, and exhausted. A Lifetime of Dieting Without Relief
Stephanie’s battle with weight began at age twelve when family pressure to stay thin pushed her onto the low-fat bandwagon of the 1980s. Following USDA guidelines, she filled her plate with cereal, sandwiches, and pasta, yet never discovered what it felt like to thrive. Through college, ROTC, and the Army National Guard she counted calories and feared disqualification if she gained weight, but “feeling good” remained an unknown concept.

Endurance Dreams, Low-Fat Reality
Marriage, two pregnancies, and ever-rising weight convinced her that endurance sports could carve away fat. She trained for marathons, triathlons, and even an Ironman while fueling almost exclusively with carbohydrates. Searching for answers, Stephanie followed elite ultrarunner Scott Jurek into veganism while logging ultra-marathon miles. Moving from Paleo to low-carb Paleo eased digestive issues, cleared her skin, and erased allergies and asthma. Sizes dropped from 16 to 12, then 10. Encouraged, she enrolled in Ben Greenfield’s Superhuman coaching and earned C.H.E.K. Institute certifications, deepening her grasp of metabolic health.

Discovering the Keto-Carnivore Approach
A conversation with Vespa Power’s Peter Defty led her to Esmée La Fleur’s Zero Carb Zen community, where on-again, off-again stints with a keto-carnivore template took her to size 8. Social pressure made consistency tough until she joined a 90-day Keto-Carnivore Study. Saying “no” in gatherings finally felt easy, and she slid to a stable size 6 while experiencing an unfamiliar sense of well-being.

Athletic Breakthroughs Without Carbs
Training for Tour de Tucson during the study, Stephanie fueled rides solely with meat sticks, electrolytes, salt, and Sports Legs supplements. The no-carb strategy paid off: in 2017 she averaged 18.45 mph over 54 miles—far faster than her carb-fed 10.06 mph pace for 60 miles in 2012. Personal bests continued; functional threshold power soared from 135 watts on low-carb Paleo to 201 watts on keto-carnivore.

A Brief Relapse and Swift Return
Holiday indulgence in chips, salsa, and margaritas bumped her back to size 8 and reminded her how quickly health declines with processed carbohydrates. Within days of recommitting to keto-carnivore in January, energy, mood, and cycling speed rebounded, and her clothing size trended downward once more.

Health Reclaimed and Goals Ahead
​Today Stephanie, now forty-eight, cherishes a regular 28-day cycle, zero asthma medication costs, and effortless recovery from workouts. She hasn’t yet unveiled six-pack abs but insists she feels better than at any previous point in her life. With further fat loss and continued healing on the horizon, she expects those abdominal muscles to appear soon—proof that a disciplined keto-carnivore lifestyle can succeed where decades of conventional dieting failed.
