Diagnosed with rheumatoid arthritis, Parkinson’s disease, and osteopenia, Mimi was trapped in a cycle of prescriptions and debilitating side-effects. From Vegan Decline To Keto-Carnivore Revival
I am a bilingual speech-language pathologist, published author, actor and spirit medium raising three amazing children—Seth, Sienna and Syler. For twelve years and through three pregnancies I thrived on a controlled low-carb approach, yet in search of digestive relief I adopted veganism for six years. The change was catastrophic. Coffee remained, often Swiss-water decaf. Avocado or high-cocoa keto chocolate appears rarely at social events. I stopped counting macros; hunger cues now guide three satisfying meals—and sometimes a snack—each day. Intermittent fasting is optional rather than obligatory.
Within weeks my gastrointestinal tract healed completely. Hair thickened, nails strengthened, skin regained youthful fullness and glow, wrinkles faded, joint pain disappeared, energy soared. Cognitive fog lifted; clinical depression vanished; emotional stability returned. My immune system transformed: in four years I have caught only two brief colds despite daily contact with sick children in schools. Pre-diabetic labs normalised, systemic inflammation vanished, cholesterol profile reached optimal ratios and my coronary-artery-calcium score remains zero.
Debunking Cholesterol Fear
Contrary to outdated statin-driven dogma, elevated dietary cholesterol does not cause heart disease; chronic inflammation from sugar does. The true metric of cardiovascular risk is a coronary-calcium scan, not an arbitrary total-cholesterol number.
Fitness And Body Composition
Today at forty-two I maintain a lean curvy figure—size 00 and 114-118 pounds—on minimal gym time: resistance circuits four to five times weekly on home Pilates equipment and cycling sessions five days a week. Stretching and breath work keep cortisol controlled. Despite less training than during my vegan years, muscle definition is superior and recovery swift.
Mental, Spiritual And Professional Gains
With keto-carnivore my spiritual practice deepened; contrary to popular belief heightened consciousness does not require veganism—His Holiness the Dalai Lama himself returned to meat for health. My intuitive work flourishes, and professional productivity has doubled because mental clarity allows me to juggle therapy caseloads, writing projects, filming and energetic motherhood without burnout.
Confronting Vegan Ideology
Abandoning the vegan label invited online hostility, yet the science is incontrovertible: plant-exclusive regimens risk vitamin B12 and choline deficiencies that shrink brain volume and impair fetal development. Children, pregnant women, elders and patients with autoimmune, metabolic, neurological or gut disorders can deteriorate dangerously on plant-only protocols. Daily Life On Keto-Carnivore

The Second-Chance Life

Food is medicine and empowerment, and the keto-carnivore template will remain my foundation indefinitely.
